at 0 o F for up to two or more years. The color will remain golden and the taste will be fresh and vibrant. Wise pecan lovers make a habit of storing their freshly shelled pecans in airtight freezer containers and extracting only the amounts needed. Frozen pecan nutmeats thaw quickly and retain their flavor and crispness extremely well.

Pecan Bars

2 beaten eggs
1 1/2 cups of brown sugar
1 cup of grated coconut
2 tablespoons flour
1 cup of chopped pecans
1/2 teaspoon of salt
1 teaspoon vanilla

bake the cake in a moderate ovenĀ  350 degrees
Spread when done with confectioners sugar and cut into
oblong bars
Pecan Pie

Makes an 8 inch pie

You will need a prepared pie shell available at the market
Cream 1/2 cup of butter
and 3/4 cup of brown sugar
beat in three eggs one at a time
Stir in one cup of light corn syrup
One cup of chopped pecans
One teaspoon of vanilla
Pinch of salt

Fill the shell and bake at 375 degrees for 1/2 hour
Easy Pecan Add Ons

Sprinkle chopped pecans on your favorite breakfast cereal

Add chopped pecans to your pancake mix

Sprinkle a few chopped or whole pecans to your favorite salad.

Roll whole pecans in brown sugar and cinnamon and bake
until crispy. About 20 minutes at 350 degrees
Pecan Topping


1 1/2 cups of chopped pecan
1 cup of maple syrup
1/2 cup of sugar
1 tsp of cinnamon
a pinch of nutmeg

Place all ingredients in a pie pan and bake in oven until bubbly. About 15 minutes at 350 degrees or until golden brown in appearance.
Heat in microwave before pouring over cake or ice cream.
Also tasty on freshly baked biscuits. Cheesecake too
